Functions of the Keyboard
Grand pianos have three pedals. The left also called the 'Una Corda' this is the soft pedal and is used on a grand piano to soften the sound although the timbre and tone are effected by this pedal also. The way this works is when the pedal is pressed all the keys are shifted to the right moving the hammers across so where as before they would hit across all three strings the hammer will now only hit one of the three strings. This gives a lighter and softer sound.
The middle or sostento pedal was the last pedal to be added. This pedal when played only sustains the strings that you have played simultaneously to pressing the pedal. This means that you are free to play the rest of the keys without them being affected.
The right or sustain pedal holds the notes across the whole piano until you release the pedal. When you play a note it would normally be dampened. This pedal lifts all the dampeners and lets all the strings ring together. The great advantage to this is that sympathetic resonance can occur. This is where the notes in the harmonic sequence of the note that is played are going to vibrate. As well as this having a string vibrating right next to another one is going to cause the strings close to it to resonate because the energy will transfer across to the adjacent strings. The sound board of the piano is there to predominately amplify the sound of the strings and its because of the sound board that the sympathetic resonance across the strings is so great and this is what puts the grand into grand piano along with its size.

The grand piano and upright piano have quite a few differences the first one mainly being the size. A large concert grand can be about 9 feet long but an upright are specifically made to give the biggest sound but take up as little room as possible. The upright piano has a small sound board but its also positioned vertically where as in a grand the sound board is positioned horizontally making the entire piano much much bigger and louder.
Another difference is the middle pedal. On a grand piano this is the sostenuto pedal. The equivalent pedal on a upright piano does the same thing just it uses a different mechanism to do so. On a grand the sostenuto pedal sustain the notes that you play while pressing the pedal meaning you can be free to play other notes that will not be sustained. On an upright this softer sounds is created by a felt cloth coming down in front of all the keys meaning the hammers don't have a direct contact resulting in a softer sound. On an upright piano this pedal is called a practise pedal.

Another difference between the grand and the upright is the lid and I feel that this has such a big effect of the overall sound that the piano produces. The lid on a grand piano is very large and cover the whole body including the strings and soundboard. A grand piano has 2 setting for the lid, either fully open or slightly open. This changes the tone of the piano completely and having this option can give the piano player some control over the tone he wants. On an upright the lid is very small, it can be opened but it doesn't have a huge effect on the sound of the piano. As the lid only opens a small amount from he top and doesn't open up all the sound from all the strings and sound board like the grand piano you are never going to get the tone like a grand piano gives with the lid open. This is a very big difference as the lid effect the sound of each piano as a whole and because of the uprights much smaller lid and configuration and positioning of the sound board and strings inside it will never give the true sound of a grand.

A MIDI is made up of samples that the manufacturer as produced and the quality and detail of these samples determines how good and realistic the midi sound is. The MIDI controllers have control over a few of the major parameter of a piano sound but some are just to complex to recreate. A MIDI controller can usually control the velocity of a note and the length of the note being held. It can also control sustain with the addition of a pedal. These features combined give a somewhat realistic sound of a grand piano but there are many elements missing.
